Learn basic flour milling principles and receive a greater understanding of the relationship between wheat quality and flour performance at the flour milling training for state wheat commissioners and staff. The course will be held December 5-7, 2017 at the IGP Institute Conference Center.
This training will be taught through a series of lectures and also through hands-on training in exercises and laboratories in KSU's Hal Ross Flour Mill, Shellenberger Milling Lab and the Baking Laboratory.
Participants will gain knowledge in the milling industry, covering topics including milling extraction and other milling math; understanding flowsheets; the impact of wheat quality on milling extraction; wheat cleaning and conditioning; milling systems and how they work together; wheat and flour blending; flour and dough testing methods; and flour functionality.
