Puratos has opened a new Flour Competence Center at its headquarters in Groot-Bijgaarden, Belgium, creating a specialized facility focused on flour analysis, variability assessment and application guidance for bakery and patisserie manufacturers.
The company said the center is designed to help bakery producers navigate increasing uncertainty in flour quality caused by changing crop conditions, evolving agricultural practices and shifting global supply dynamics. By combining advanced analytical technology with research and development expertise, the facility will convert complex flour data into practical insights aimed at improving process stability and product consistency.
Flour variability has become a growing concern for millers and bakers as even small changes in protein levels, enzyme activity, water absorption and moisture content can alter dough handling, fermentation performance and finished product characteristics. Because wheat quality varies from harvest to harvest, maintaining consistent flour performance remains a challenge across the supply chain.
Puratos said the center will focus on several research areas, including the impact of crop evolution on bakery and patisserie products, the development of ingredient solutions to stabilize flour quality, the performance of regenerative agriculture-based flour in finished products and new methods of flour analysis.
The company plans to use insights from the center to support the development of its bakery improvers, sourdough systems and patisserie mixes. Linking flour data with baking performance is expected to help Puratos refine its product portfolio and support customers in maintaining quality across fresh bread, frozen dough and extended shelf life applications.
The new center is also digitally connected to Puratos’ network of flour laboratories worldwide, allowing the company to combine global data with local expertise. This integrated approach is intended to create region-specific solutions based on local crop conditions while contributing to a broader understanding of flour behavior across markets.
Puratos said the center will strengthen collaboration across the value chain by expanding internal expertise and working more closely with customers and partners. As the industry continues to adopt sustainable and regenerative farming practices, which can increase raw material variability, the company said the center will play an important role in helping bakery producers adapt to changing conditions and maintain product quality.
